Mixed Vegetable Kootu
I make kootu with whole lot of veggies. But i have never made a mixed veg kootu, few days back i decided to make this and guess what it taste so yummy. Plus it is so healthy too..

Ingredients for Mixed Vegetable Kootu
- Oil - 1 tsp
- Onion - 1 medium size chopped
- Tomato - 1 chopped
- Potato - 1 peeled and cubed
- Beans - 1 chopped
- Carrot - 1 chopped
- Salt to taste
- Turmeric Powder / Manjal Podi - 1 tsp
- Yellow Moong Dal / Pasi Paruppu - ½ cup
For Grinding:
- Coconut - ½ cup grated
- Cumin Seeds / Jeerakam - 1 tsp
- Green Chillies - 3
For Seasoning:
- Coconut Oil - 1 tbsp
- Mustard Seeds / Kaduku - 1 tsp
- Urad dal / Ulundu Paruppu - 1 tsp
- Curry leaves - 1 sprig
How to make Mixed Vegetable Kootu
- Cook moong dal till it gets soft. Set aside.
- Grind ingredients given for grinding to a smooth paste. Set aside.
- In a pan, heat 1 tsp oil and add in onions, tomatoes and saute for couple of mins.
- Add in all veggies and salt. Mix well. Saute for 5 mins or so.
- Now add a splash of water and cover with a lid. Simmer the pan and cook on low
- heat for 10 to 15 mins till veggies are cooked.
- Now add in cooked dal, coconut masala, turmeric powder and mix well.
Simmer for 5 mins or so. - Now make seasoning by heating oil and crackling mustard, urad dal and curry leaves.
- Pour this into the curry and mix well.
- Serve.

Ingredients
- 1 tsp Oil
- 1 medium size chopped Onion
- 1 chopped Tomato
- 1 peeled and cubed Potato
- 1 chopped Beans
- 1 chopped Carrot
- Salt to taste
- 1 tsp Turmeric Powder / Manjal Podi

Just saw this Aarti.Thank you for sharing! I'm looking to make this tonight for around 30 people to go with chapathis along with a few other dishes also. Do you think it is a good idea to add ginger to this?
