These low point oven-baked meatballs are my favorite method for cooking meatballs. Easy cleanup and no grease splatter from frying them in the pan! My meatballs use lean ground beef with simple ingredients that are easily found in your pantry. Boil some noodles, make my marinara sauce recipe along with my meatballs, and dinner is served.

For evenly sized meatballs use a medium cookie scoop that is about two tablespoons in size. Use a food processor to mince the onions really fine or combine everything in that. I just used a bowl and my hands to mix all the meatball ingredientstogether.

These meatballs would go great with my Baked Spaghetti and Meatball Casserole or with my Low Sodium Spaghetti and Marinara Sauce.

Marinara Sauce

Since this blog post has been written, I now have my very own Low Point Marinara Sauce recipe to go with these meatballs. Store-bought marinara sauce has a lot of extra sodium in it that is not necessary and olive oil.

Low Point Marinara Sauce Recipe

Ingredients Needed

  • Lean ground beef - Is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues.
  • Egg - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
  • Bread crumbs - are a type of breadcrumb commonly used in Japanese cuisine. Panko bread crumbs can be found in most grocery stores and are often used as a substitute for traditional breadcrumbs in recipes.
  • Diced onion, cooked until soft (yellow or white)
  • Garlic cloves - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar.
  • Fresh parsley
  • Parmesan cheese is a hard, granular cheese that originated in Italy. It is typically made from cow's milk and has a sharp, nutty flavor. Parmesan cheese is often grated and used as a topping for pasta dishes, salads, and other foods.
  • Salt and pepper - to taste

How to Make Low Point Meatballs

Preheat oven to 400ºF. Spray a large cookie sheet with cooking spray.

Spray a small saucepan with cooking spray, and cook the onions until they are soft and tender. Let them cool.

In a medium-sized bowl, mix together onion, bread crumbs, garlic, egg, cheese, salt, pepper, and parsley in a large mixing bowl.

Add in ground beef and mix gently until combined. Do not overwork. Form into 1-inch balls using a cookie scoop or your hands, and place on prepared cookie sheet.

Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.

Serving size: 1 meatball.

Variations

This recipe uses lean ground beef. I like to use either 93% of 96%. You can find lean ground beef at most local grocery stores. Aldi and Wal-Mart will have the 96% lean ground beef.

If you don’t want to use ground beef try a combo of ground turkey and chicken.

For gluten-free meatballs use gluten-free panko bread crumbs.

Like a little heat? Add some crushed red pepper flakes.

  • 1oz of grated parmesan cheese
  • ¼ tsp each of salt and pepper

    Made this a few times. I tweaked it to do 1/2 turkey and 1/2 beef, then you can 2x the Meatballs!
