  • BATTER

  • 1 cup uncooked rolled oats (instant or regular, I used rolled oats)
  • 1 14 cups boiling water
  • 12 cup butter or 1/2 cup margarine
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 12 cups flour
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 34 teaspoon cinnamon
  • 14 teaspoon nutmeg
  • TOPPING

  • 14 cup butter or 1/4 cup margarine, melted
  • 12 cup brown sugar
  • 3 tablespoons cream or 3 tablespoons milk
  • 34 cup flaked coconut
  • 13 cup chopped nuts (optional)

directions

  • In a shallow bowl soak oats in boiling water for 20 minutes.
  • Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.
  • Beat in eggs and vanilla.
  • Sift and measure flour, sifting again with the soda and spices.
  • By this time the oats will be soaked and cool.
  • Remove beaters from creamed mixture and fold in soaked oats.
  • Sift flour mixture over and fold in.
  • Turn in a buttered 9x9" pan and bake at 350°F for 40-50 minutes .
  • Mix all the topping ingredients.
  • Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.
  • Watch carefully.

  1. My original recipe ...( which i can not locate now of course)...baked in a 9x13 pan... It was from the Quaker oats box. Does anyone else have this recipe ?? And I am High Altitude now so need that info tweeted too.

  3. Very sweet and decadent. I might change the topping next time since my son didn't care for it. I love how moist this was without being soggy. My only change was to bake in a 9 inch round cake pan. Next time I'll try to cut back on fat by using applesauce instead of butter and maybe fiddle with the carb count for my diet. I did have some and it was worth the cheat tho. :-)

  4. Every year for my birthday my mom would ask me what kind of cake i wanted and I picked this one ever time. Im 57 now and my mom quit making me cakes years ago but I still love this cake. I believe the recipe is exactly the same.

  5. Made a vegan version of this. I used 2/3 cup applesauce instead of the eggs, margarine instead of butter and soy milk in place of the cream. It turned out moist and delicious!!

Tweaks

  1. This is an amazing cake! Only minor tweaking - used 1/2 tsp soda and 1 tsp baking powder for the 1 tsp soda. Used 1 1/2 times the topping. Baked in a cast iron skillet, and lined the bottom with parchment paper. So yummy!!

  3. Baked this for our church tea, only used 1/2 the sugar and used Oatmilk instead of Cream or Normal milk in the topping, It was a hit and loved by everyone, including the children.
