Substitute for Bread Crumbs in Meatloaf

What if I don’t have any bread crumbs on hand? No bread crumbs? No problem. Simply substitute crushed crackers instead. Saltine crackers or a buttery round such as Ritz work best.

You will need bread crumbs or cracker crumbs of some type. They act as a binding ingredient when mixed with the milk, egg, and ground beef and this is what holds your meatloaf together. Without them your meatloaf will just fall apart.

Gluten Free? Many grocery stores now accomodate a gluten free lifestyle. Kikkoman makes a gluten free panko breadcrumb. In lieu of this, you can also easily substitute crushed gluten free crackers.

Time and Temp for Easy Meatloaf Recipe with Bread Crumbs

Preheat your oven to 350 degrees. Form your loaf on a lightly greased foil-lined baking sheet or press into a loaf pan. Bake the meatloaf for 45-55 minutes in the preheated oven.

An instant read digital thermometer comes in real handy. Your meatloaf should reach a minimum internal temperature of 160 degrees. FAQs

Why do you put bread crumbs in meatloaf? ›

Breadcrumbs for meatloaf are used to absorb the juices and keep them in the meat while it cooks so that it stays moist; without the breadcrumbs, the meat would dry out in the oven. Breadcrumbs also add to the meatloaf's tender texture so it's more than a giant seasoned hamburger when you pull it out of the oven.

What is the secret to a firm meatloaf? ›

To help your meatloaf stay together add things such as eggs, bread, crushed croutons, oatmeal, crackers, and breadcrumbs, these are all key ingredients that help meat stick together.

What do you put in meatloaf to keep it from falling apart? ›

The answer lies in the binding ingredient. Binding ingredients are the items that, quite literally, pull your dish together. In meatloaf, this is most commonly the eggs and breadcrumbs.

What makes meatloaf not fall apart? ›

Binders like eggs or breadcrumbs will certainly help to keep your meatloaf together. But the fat-to-lean ratio is also important, as well as the cut of meat that you are using.

What is the basic meatloaf formula? ›

The Basic Meatloaf Formula

All recipes for meatloaf start with the same basic formula: 2 pounds of ground meat and a “panade” made of bread or crackers soaked in milk. Along with a few eggs, this panade helps to hold the ground meat together and adds some essential moisture to the mix.

Why milk instead of water in meatloaf? ›

Milk and other dairy products, like heavy cream and buttermilk, contain both water and fat, adding two types of moisture to our meatloaf. There's a long-held theory that milk can tenderize ground meat, and this is the reason often cited for cooking ground meat in milk to make a Bolognese-style ragù.

What gives meatloaf the best flavor? ›

Two things guarantee a meatloaf that tastes amazing:
  • Proper browning. For best browning, I form the meatloaf freehand on a parchment-lined baking sheet. ...

Can you put too many breadcrumbs in meatloaf? ›

Adding more to your mixture is always easier than taking some out. Another common reason meatloaf is mushy is too much filler, like breadcrumbs, bread, and oatmeal. Too much filler will stop it from baking correctly and becoming a fully formed meatloaf.

Is it better to bake meatloaf on a sheet pan or loaf pan? ›

When choosing a baking pan, avoid a small loaf pan or baking dish. A tight fit means that the loaf will steam — think school cafeteria meatloaf. Instead, use a sheet pan or a large baking dish and leave some breathing room so the edges will caramelize nicely.

What happens if you put too many eggs in meatloaf? ›

Eggs bind the mixture, add flavor and increase browning, but too much egg will make a meat loaf tough and rubbery. Use about one egg per pound of meat. If using pork sausage, skip the egg. Milk adds flavor and moisture and helps distribute the seasoning throughout the mass.

What can you put on top of meatloaf besides ketchup? ›

Some popular substitutions include:
  1. Barbecue sauce.
  2. Roasted tomato and dried chili sauce.
  3. Sun-Dried tomato sauce.
  4. Mustard and Barbecue sauce.
  5. Coca-Cola and Barbecue sauce.
  6. Honey Barbecue sauce.
  7. Homemade Tomato Sauce.
